Alaskan Pollock with Hot Bacon Vinaigrette
Due to some health concerns I have been eating a lot more fish. I actually like fish a lot, it just never found its way to my shopping cart. I can't have it fried so I've found a way to make it a little more tasty without deep frying it.
Hot Bacon Vinaigrette
1 pound bacon (I find it helpful to cut the bacon before frying instead of crumbling.)
1 large onion, finely diced
1 1/4 cup raw sugar (if you only have regular sugar, I would start with 3/4 cup, then taste from there)
pinch of salt
6 teaspoons cornstarch
3/4 cup balsamic vinegar (if you have another type of vinegar you can up it to a full cup, that's what the original recipe called for)

- 1. Fry the bacon super crispy. SauteƩ onions in bacon pan. Drain fat.
- 2. Mix salt, cornstarch, and sugar. Mix vinegar and water in separate bowl.
- 3. Slowly add liquid mixture to sugar mixture while whisking.
- 4. Put everything back into the pan and reduce.
Once the vinaigrette is done take out a large piece of foil. Slap down a fillet of Alaskan Pollock (or any other firm white fish), spoon a couple tablespoons of the vinaigrette over the fish, and wrap up it up into a package. Bake on 350 F for about 20 minutes or until done. Bake a sweet potato on 400 F for about an hour or microwave for 5-6 minutes on high and you've got yourself a meal!

Some of the elements of nutrition seem really high, but other than sugar (as always...) I was below my recommended daily allowance for a 1200 calorie daily diet. Either way, it was a delicious meal!
